I plan on making a pirouette covered cake for a friend. I have done these in the past, but not in a long time. I have 3 layers of chocolate cake, and a great frosting. What filling would you advise I use--any and all answers more than welcome!
Also, can I make a ganache using non-dairy creamer? This needs to be totally dairy-free!

Oh, Chocolate can lend itself to anything, pretty much.
I've done chocolate with: cheesecake flavor, lemon, banana cream, cherry, raspberry, strawberry, mocha/coffee, mint, just to name a few.
There's also all the nut flavors, caramel, eggnog, cinnamon, coconout, marshmallow, peanut butter, and on and on...
so many choices!
don't know about the ganache.........what flavor pirouette cookies are you using??? Might be delicious to use the mocha chocolate ones...with a chocolate cake and a mocha mousse filling!! yummy! Does your friend like coffee??? Another good pairing with chocolate is orange, raspberry, or strawberry.......but again with the dairy thing maybe you don't want mousse.

here is a link......they used soy non-dairy creamer...but I imagine if that works you could use reg. non-dairy...the ganache is at the bottom of the page
for the mocha mousse...I would just substitute the cream again!!!
