I have to make a chocolate mousse but I don't want it to get people sick since the cake willl be out for some time.

So my question is, does pastry pride act exactly like whipping cream? Does it taste the same? Can I substitute it in recipes for whipping cream? (i.e. mousse recipes)

Pastry pride is sweetened-much sweeter than whipping cream.

Otherwise, once it is whipped it is much stronger.

You can use pastry pride or rich's bettercream just don't beat it as long as you would for frosting.

Pastry Pride is not a dairy product, it holds up much better than whipped cream.

So it would be fine if I made a mousse from it, taking into consideration that I will cut back on the sugar?

Nick there are probably enough preservatives in there to keep for a very long time. One thing about it that I'm not thrilled about to be honest, so many preservatives in our food.

I use Pastry Pride to make mousse fillings all the time. It's non dairy and can sit out just fine with no problems. I like to add any flavor of a box of dry instant pudding mix to it to add even more flavor. I think it tastes very similar to heavy whipping cream and is close to the same consistancy. You can add any flavor to it you want.

Can you find the chocolate Rich's Bettercreame at your Smart & Final?? All you have to do is whip that up and you have a chocolate mousse-like filling. Don't need to add anything and it tasted pretty darn good - kinda like the chocolate filling in a Costco cake.

I was there yesterday and I didn't even look. I didn't look for cake flour either (I heard it was cheap there?). I'll have to go on Saturday. Thanks for the tips. thumbs_up.gif
