Okay dokey.

Customer wanted fondant covered cake. Usually, I would not refrigerate it, but it is going to have a pudding with strawberries filling.

Delivery is not until 6 pm and I have to have it done Thursday evening for next day delivery.

Fridge or no fridge?

Ok, I'm no expert, but this is what I do so that I don't have to refrigerate my cakes after they are decorated. I have to admit that I have never really worked with fondant so I can only go by what I have read here. I thought you weren't supposed to put it in the fridge....so here is what I do.

I always use pudding in my cakes for the filling because it is easy...but I don't use the kind you cook...I use the ready-made pudding packs for kids. That way, I can leave my cake out (I find the fridge dries out the cake) and there won't be any worry of the cake "spoiling"...I always get great comments on my cakes and everyone loves the filling. Strawberries and pudding would be great.

I always refrigerate my fondant covered cakes. What I do if I still need to work on them is take them out and leave them on the counter for about an hour. Enough time for it to condense. So far, I have never had problems with them. HTH.

There are threads here on CC that say that the ready made pudding packs need to be refrigerated once opened. I think I would refrigerate the cake to be on the safe side.

the pudding is a doctored box pudding. very delish but it does have whipped cream it so refrigeration would be best

I always refrigerate my fondant cakes...all of my cakes actually. It may sweat when you take it out depending on how hot the outside temp. is but it will evaporate and be fine.

You can refrigerate fondant-covered cakes but as mentioned, take it out with enough time for it to come to room temp.
And try not to touch it (the condensation) until it's completely room temp thumbs_up.gif
