I have an order for some Mickey cookies for the weekend a couple of weeks away. I am going to have a lot of stuff going on before then so wondering if I can make the NFSC dough today, cut out the un-baked Mickey cookies and freeze them now. Then bake and decorate in 10 days time?
If so, how would you freeze them, placed on a cookie sheet, or can I freeze them until they are hard and then put in a bag? I am afraid to damage the unbaked cookies, on the other hand the cookie sheets take up a lot of space in my freezer.
What you asked about is exactly what i do. I cut out the cookies, let them freeze a little then place them in freezer zipper bags with parchment paper between layer. (parchment won't stick to your dough) I use the gallon size bags. Just make extras incase of breakage. When you are ready just take them out, pop on cookie sheet then bake. Since I started doing this I never had a problem with making cookie in advance.
I learned the hard way.

I flash freeze them on wax paper lined cookie sheets, then move to containers.
I do the same, except I use Tupperware, Glad or Ziploc storage containers because that's what I have around the house.
Works great and is a real time saver.
I put them in frozen and bake a little longer and at a slower temp.
They come out great and never spread.
I also do this with the chocolate rollouts.
I freeze choc. chip cookies all the time even GF ones.
I either make the little balls and freeze and bag or I make little rolls that I wrap and bag - usually about 12 cookies worth. Then you slice and bake.
That is how I give them to a friend of mine's mom. She ten takes out how many she wants and bakes them.

I have a lot going on this week, trying to get ready for my son's birthday party this weekend, and he wants cookies to take to school on Friday. I have volunteered to help with an art project at school on Thursday, and have a cake for Friday, an cake for Saturday PLUS my son's party on Saturday!
this will be a great time saver for me! I can just pull the cookies out and bake with the cakes!!!

I alway bake and decorate my cookies (with RI) let dry then layer them in a box with parchment between and wrap the box in plastic then freeze. Have never had a problem with fading or taste sometimes if i'm busy they are frozen a few weeks or months. ![]()
