Can I Freeze Cream Cheese?

So I'm doing this rat and I wanted to bake, cool, fill, freeze and...... then cut and ice my frozen cake. The filling is marshmallow puff and cream cheese with sliced fresh strawberries. Should I freeze or not?

Cream cheese by itself - no. Filling using cream cheese - yes. Oh wait... the fresh strawberries make that a no. They will not be nearly the same.

Oh man what will happen to the strawberries? What if I flash freeze the strawberries after I have sliced them and then froze the cake. (They will prob. unfreeze by the time I get the cake to freeze) Shooooot!

berries on their own will be come mushy when thawed. If they are cooked in a filling, they do better. Plain cream cheese will be granular when it thaws. It won't hurt the taste, but it does effect the look and feel of the cream cheese.

Well, think of the what the frozen strawberries at the store look like when thawed... nothing done to them but freezing. They will taste ok, but the texture will be off and they will juice more. If you are going to freeze it anyway - at least start with the frozen berries and don't waste the extra $$ on fresh icon_smile.gif
