Fixing A Cake Problem!

I HAVE BEEN MAKING CAKES FOR ABOUT A YEAR NOW AND I ALWAYS USE CAKE MIXES. BUT RECENTLY I HAVE BEEN FREEZING THEM AND THEY TURN OUT STAILE. WHAT CAN I DO? I NEED TO FREEZE THE CAKES SO I CAN CARVE THEM BUT I ALSO WANT THEM NICE AND MOIST. SHOULD YOU WAIT TO FROST THE CAKE AFTER ITS BEEN DEFROSTED OR WILL IT BE ALL MOOSHY? I USUALLY FROST THEM AFTER THEY ARE DONE BEING CARVED AND IT HAS TRUNED OUT FINE. I NEED HELP! THANK YOU!

If you wrap and freeze them before the cake is completely cool, the moisture stays in the cake. Keep it tightly wrapped in you want to thaw it before using, or carve with still mostly frozen, they protect it from drying.

Try brushing the top of the cakes with a simple syrup (half water half sugar boiled till the sugar disolves) while the cakes are still warm. Then once they cool a bit, wrap them and freeze at that point. I have tried it and my cakes come out very moist. I have also frosted cakes that are still frozen and other than the moisture beading on the frosting as it deforsts, I haven't had any problems. When it does bead, I just leave it alone and it evaporates. GL.

Sorry It took me so long to replie. I was in the middle of a move. Thank you for all your help. This will make my cakes just right.
