I use 3 mixes for a 12x18x2. Not sure what you mean by dividing a mix in half. Each mix is about 5 cups of batter.
I use 2 for an 11x15 and 4 12x18. I've never had any problem with it over flowing either.
Interesting the varying answers! I have always used 3 but it seems to me that 2 1/2 mixes would be perfect. Just don't know if I would be successful in halving a mix/eggs/water/oil accurately and wondered if anyone ever did that.

I used to use 2 until my MIL told me that 3 would fill it up much better.
The pan says 2 but I use 3 betty crocker mixes. 3 1/2 would make it better but I hate having the other 1/2 of the batter. So I am thinking about using the extender on 1 or 2 of the mixes to see if that helps fill out the pan.
I wonder if some of the variation could be the type of pan? I just baked 7 12x18 cakes this past week. I bought a Magic Line pan since I did not already have one that size. 3 Duncan Hines mixes baked to just above the top of the pan so I came out with nice tall cakes after leveling.
