I am soon to be having the biggest cake week I've ever had. In 2 weeks, (the week of May 14-19) I have 3 pretty big cakes. First I have to do one for a teacher @ my son's school. She has 3 boys graduating from High School and they are all on the fire dept. She wants a cake with 3 fire helmets on it and their name. That one seems easy enough. Then my MIL works for the American Red Cross, and they have a big charity dinner event. She asked me about donating the cake weeks ago, and I agreed. She said she had to discuss it with the board, and would let me know. She just called me back last night and said she wants it. They will be playing game shows after the dinner, so we decided on stacked gifts. But it has to feed 250!!!!
Then finally, my husband is a member of a site that is having a big cook out on that Sat. (19) and he volunteered me to do a cake. I love the fact that he thinks my work is good enough for him to want to show it off to people that he knows, so I'm definately doing that. It's going to be a sheet cake (I think) with their logo in the center and small 4 X 4 trucks all around it. (The site is Carolina K5, a truck site). Anyways, does anyone have any pointers or advice? What can I do to make this easier on me? Please help me!!!!! ![]()
I would start baking.Bake and bake,and freeze them all.That way when you are ready to decorate at least you will have all the cakes baked.Then get all the frostings and icings ready.Store them in the refrigerator and there you got all of them ready,too.
As long as you have the bulk part of the job taken care of.decoratring them will be much easier for you.

Start baking right now and freeze! Take cakes out to thaw at least three days in advance of event day. So if the event(s) are on Sat., then take out freezer on Wed. thaw at rrom temp. (don't unwrap until completely thawed), torte, fill and crumbcoat on Thurs., ice, decorate and box on Fri.(this works well if you have more than one cake or a large cake to do). Smaller cakes or multiple small cakes for the same day you can probably do this two days in advance.
Make all gumpaste or fondant decorations that need to dry now. If using bc make all you need in advance. I like to make mine the day I torte, fill and crumbcoat but hours later (I like to space out each cake task). Prepare all boards and boxees in advance. This way everything is prepared and ready to be completed.

I agree with Lejla...start baking and freezing!!! I *think* I've read on here that you can even make and freeze buttercream, but you better double check.
Also, I'm an obsessive list maker, especially when I've got multiple orders. I make a list of every icing/fondant color I'll need, etc. That way I don't feel so overwhelmed when I start decorating - my list tells me what to do! Good luck!!
I agree w/ everyone~ This is how I do it.. A week or 2 ahead of time... I cut & cover boards & have them ready before I bake. Make icing & color icing to the colors you picked & either freeze or put in frig. I freeze icing in ziploc bags or bowls. Then the next day I bake & freeze cakes. A few days before the cake is needed I thaw the cakes out. At the end of the day I crumb coat & ice . Next day I decorate~ Then your good to go~ Do it all in steps & on different days.
