Advice Needed....

Things have been so hectic lately that I haven't had much time to actually come on CC and post, reply or add pictures. This is a rarity for me latly to be able to be on here.

Anyway, this sounds to good to be true and that is why I am coming here.

I have been asked by a local restaurant to do their desserts. In exchange I would be able to use their kitchen at no charge. They only ask to purchase their desserts at the cost they can get them for now. Also, they are starting catering so I would have the opportunity to use their kitchen for free and do their desserts for their catering. The owner said he would let everyone know that the desserts came from my business and I would personally meet with the people for any event that wanted special cakes. (wedding, birthday, etc.)) Oh, right now I also rent kitchen space from a coffee shop and pay $10.00/hour. It is starting to break my bank, because I am getting a lot of little orders where I am paying him more than I am making, but I can't raise my prices that much.

The restaurant is new (3 years) but well known in my town. He is just starting catering so he was hoping to have more for the people.

Now, I know this sounds to good to be true, so I am asking all of you wonderful people here, should I be worried or should I jump in?

Please be completly honest and let me know what you would do? Also, can you think of any downfalls to this? I can think of all the pro's but what about the cons?

On the logical side, get everything in writing and have an attorney look it over. The $200 you spend now may save you thousands down the road. Leave room for growth, expansion and a "get out of jail free" card.

On the emotional side.... WOOO-WHOOO! How great for you to have this opportunity!

TPDC,

We have a restaurant and not sure how big your kitchen is (ours is very small) but make sure you have discussed workspace is there a part of the kitchen you will be able to work in so you won't be in the way of others and they won't be in your way, when you will have access to the kitchen eg. are you going to want to use it Fri night for Sat orders when Fri night is the busy time for the restaurant? If it is a big kitchen it might not be a problem but if it is smaller it could be, I know ours is absolutely crazy during dinner service and there is no way you could do cakes in there at that time.

Would also need to make sure the other kitchen staff are respectful of your stuff ie. that they are not going to dump greasy pots and pans near your pristine white iced cake or put stuff on top of it in the coolroom etc. Maybe get the boss to talk to them about you coming.

They other thing is to know how much time you will be spending on making the desserts for the restaurant and will this be enough business for you or will you still need/want to do other personal orders and if so is that going to fit in with your arrangement with them.

I think it generally sounds like a good idea you just need to ensure you both understand and agree on the details
