I love working with fondant, but I may have to abandon it because everyone hates the taste. I have tried the Wilton fondant with various flavors including raspberry, the Satin Ice and the MMF. Everyone pulls it off and eats the cake with just the buttercream that is underneath. What am I doing wrong?!!!! Is there anything else I can try?
Don't feel discouraged. It is nothing you are doing wrong, people just don't like the taste of fondant. I think it may have something to do with the texture, as well. I may be wrong, but it seems to me that fondant is more eye candy than anything else.
EVERYONE pulls the fondant off. It's not you. it's not your fondant. IMHO, fondant is for looks only. I think everyone understands that. I put plenty of buttercream under mine so people will have something left to sweeten their cake when the inevitable happens.
I don't think you are doing anything wrong. It is just as the others mentioned--some people hate it, some like it. I really do think it is more of a texture issue then as taste issue (well excluding Wilton fondant--that IS a taste issue). I have poeple who love buttercream, but because they have texture issues, they don't like rolled buttercream either. As long as you still accomodate and put enough BC under the fondant, I think people will still be happy. Yes, it does seem like a waste, but think of the awesome designs that you can do with fondant that are pretty hard with BC. HTH
I only use it for add ons for the cake. My buttercream is what sells my cakes. I simply tell people I don't cover cakes with fondant. I haven't lost a client yet.

Even at Disney weddings, most of the cakes are made with fondant covering but has a good thick layer of buttercream underneath. Once the bride and groom cut the cake, it is taken in the kitchen. The fondant is removed and the cake is sliced and served.
I have only had one bride that insisted on fondant because she loved the taste. Every one else at the wedding removed it before eating.
I've had the opposite experience..When I was doing wedding cakes all the brides said how they heard fondant was nasty and gross. I use Satin Ice so I started bringing samples with me to my consults. People were surprised how good it tasted and would usually request fondant cakes... I think fondant cakes are easier to do so I pushed it as much as possible.

Thats good to know. I like the idea of giving them a sample to taste. I will inform my clients of the option to use it and then remove it before serving. There are just some things you cant accomplish with BC.

It's really a taste/texture preference. My fiance LOVES it, I'm okay with or without, and the kids will only eat it if it is off the cake - they're just weird anyway. I like to do decorations with it, but not frost with it. That way, the ones that want it have it, but I don't waste a ton of it for those that just peel it off.
i dont know ..........here evryone loves it ...espcially the kids and teenagers....i usually have them fight for the details cuz theres not enough to go around.... i for one love it but ony in small quantities so you know scraps go in my mouthwhen im done baking...hehehe

I agree Satin Ice is the best. Wilton fondant is just gross!! They really need to work on it.
It is a waste to think that it's just pulled off before eating the cake, but it's been paid for (and I charge much more for fondant!), so I see it as not really my problem

. Plus here it's not an issue, fondant and Royal icing are what Brits are used to - it's the buttercream decoration we find weird (we just tend to use it for filling!)! I offer both, plus several other covering options, so, as long as it's all been paid for, I don't care! I do prefer the clean lines of fondant though, and am much happier using it, I HATE smoothing buttercream!
I use the choco-pan fondant. I haven't had anyone complain about the taste yet. Of course some may prefer not to eat it because of fondant they have tasted previously, or they don't like the texture.
Using the calculations from choco-pan on how much fondant to use, I had used a lot less than they recommended. It can be rolled extremely thin.
I like to be able to offer something that is pure white for wedding cakes, (or can be colored blue, or other colors that are difficult to attain with buttercream) and they are not giving up the buttercream because it's there underneath.
Even some of my kids eat it, and they are pretty picky.

Then I tell my brides that the Choco-pan fondant which I use and they taste is not available in Kansas City and I have to mail order it. (Doesn't that sound impressive?)
I don't think the shipping price is bad. $6.00 for 10 lbs and I get it in about 2 days. I think they only take paypal payments, though. I covered a cake for my sis 14"square, 11"rnd, 8"rnd and 6"round. I had calculated that it would take the whole 10 lbs, but I ended up using about 5 or 6 lbs.
It is very very soft, so you may want to practice with it. You can add some gum tex to make it a little stiffer. I haven't found that it affects the taste.
My husband and I sampled Choco-pan at the Oklahoma sugar arts Show and they have a chocolate version and a caramel/tan version which are very tasty. I think the white chocolate one tasted very much like marshmallow flavor, so it is probably similar to MMF.
