Hi!

I would like to know if I can put my MMF in the refrigerator or should I leave it on the counter?

I just made it (wednesday evening) and I am going to decorate a cake on friday or saturday morning with it.

Thanks for your prompt answer icon_smile.gif

Wrap it very carefully, more than once, and store it on the counter. It does not need refrigeration.

Great! Thank you!

And do you know how long I can keep it on the counter?

It could be interesting if we could make MMF in advance for a little less rush when cooking and decorating the cake.

Thanks

As long as you wrap it up really tight it will last for quite a while. I know i have had some MMF that I made a few weeks ago that I am still using.

Wow! I didn't know it would keep for so long. That is great news. I've never really worked with fondant at all, but if I think I will if can make a batch or two and keep it around to experiment with. Thanks for the information!

What kind of airtight container do you guys usually use?

I wrap mine in saran, put in airtight ziploc, and then in tupperware. It stays soft and pliable for months.

Slather it in a thin layer of crisco before wrapping and storing--keeps it from getting crusty on the outside. icon_smile.gif

I wanted to get he bags of marshmallows off my counter, so I made two batches of MMF and vacuum sealed them in food saver bags and stored them in the cupboard. Labeled and dated.
