Hey everyone! I will be practicing for the first time this weekend; I will be trying penny's recipe. I recently read on cc that people were not pleased with unbleached flour. In the nfsc and penny's recipes, it says use it. Why? What would happen to the cookies if bleached was used?

How do you all arrange the cookie stick into the foam? I want to try a seven cookie bouquet;

1 in the center, 2 above, 2 below and one on each side of the center cookie. The way I figure it, the center cookie should go straight through the foam. Should the top, bottom and side cookies go in on an angle?

In case my sticks don't stay securely in the foam, what can I do to resolve this? What about if the cookies are not secure on sticks? TIA

I haven't done very many bouquets, but I've baked lots of cookies. I've never had any problems with unbleached flour, that's all I use. I've also never had cookies spin on the stick, I put the stick in before baking.

You shouldn't have a problem with unbleached. I've used it often, when I run out of bleached.

What kind of foam are you using? I would suggest the floral foam. They will be secure, if you don't put them in and take them out and put them in and take them out, etc. icon_lol.gif The first time I did that, I had to end up finding new holes.

I put mine in at an angle, so you sound like you have a good plan with the center going in straight and others at an angle. I usually don't have cookies that spin on sticks... however... 2 of my bouquets fell 5 feet (the boat one and the wild one in my gallery) and I noticed one or two cookies spinning a little. The outer bag kept them in place (and saved them from the fall).

I've read some people put a dab of Royal Icing to stop the spin. Royal icing is always good to use to mend cookies also (if any of them break)... like a glue.

Actually, I was just looking through pictures of some of my bouquets.... I've put some in at angles and some in straight. It's up to you and dependent upon what you're putting your bouquet in.

I think putting your cookies in at angles on the outside is a nice effect. I might also suggest that you bake your cookies on dowels, so that you can trim the heights when you arrange them. I find that having taller sticks in the back and shorter in the front allow for more of your cookies to be seen, plus they can give a fuller look to your bouquet. Good luck and happy baking!

I read on this site to dip the tip of the stick in light corn syrup before inserting in the cookie ( I insert before i bake). This worked well for me. Mine definately don't spin anymore. It was a great suggestion but i don't remember who suggested it. icon_redface.gif
