Need Pricing Opinions

I'll be selling gourmet cookies at a large festival in the next few weeks. I'm stuck on price. They will be large drop cookies scooped out with a #40 disher. I think I want to package 3 cookies per pack, but I am unsure about what to charge. I was thinking $2.25 for 3. These cookies will have top line ingredients in them so I do need to cover my expenses. Any help is appreciated.

What kind of decorations will be on the cookies???

Also I am unsure of what size you are talking about. Are these really large cookies or kind of medium???

For really large cookies...I would think anywhere between 1.50-2.50 per cookie.

For a medium cookie...I would say at least 1.00-1.50 per cookie.

I guess it will depend on how detailed your decorations are. I think 2.25 for 3 sounds too cheap.

Traci,
The decorated cookies will have royal icing piped on to them to make them bright and colorful. The drop cookies will be chocolate oatmeal chip, peanut butter chip, and dark chocolate white chocolate chip. They are a pretty good size. I would ultimately like to sell them for $1 each, but I want to get things off on the right foot before I do that. I think the lower prices will get more people interested in the "new" biz in town. What do you think?

Figure out exactly what your costs are (including packaging) and see what that equates to per cookie. That's the only way to know for sure. Then you can decide from there how much profit you want. I know you want to price low to get your name out, but don't price too low that they will expect that price when they come back to buy from you again, or spread the word that you are cheap, unless you are okay with keeping your prices that low.

Maybe you could pack each bag with a coupon good for $1 off a dozen cookies or a free cookie with purchase of a dozen - something like that - it wouldn't cost you much, and might really help get your business started.

You could also package some of the cookies individually, and make the price $1.25 ea or 3 for $3.00. Make them think they're getting a better deal, and if some people don't want to spend much, they can still get a cookie. That would mean even more people trying your cookies, so even more potential business.

I don't ahppen to think that a #40 is that big. I use a #24 and it gives me cookies that are about 3-4" round and I would charge about that for that size. That might be too much to charge for a #40 in my opinion.

Well here's a little rule of thumb I always use when pricing anything. You can always go down but it's harder than heck to go back up.
A dollar for a large cookie sounds like a nice price but you could probably charge more for them.
You can get cheapy cookies at 7-11 for a buck. Why only charge that???
It all depends, do you want to be known as the bakery who has cheap cookies or the bakery with gourmet cookies. When peeps think gourmet they think they will be a little pricier. If you want to sell cookies for a buck I would go with smaller cookies and not such big ones. Just my opinion.

Wow, thanks for all of the input! I think that I am going to up the price to at least $3/ 3 for now and see how that goes. The cookies will be dee-lish and I am sure that when customers get their "samples" they will taste the quality and see that they are well worth the $$. I think what I need in just plain on confidence at this point!
