Lemon Cake Question...

Good afternoon everyone:
How is everyone doing? I am doing well after much cake baking over the weekend and haven't stop yet. icon_eek.gif

Well I should be thankful. icon_lol.gif I have a question in reference as what filling to use for a lemon cake. What other filling can I use besides lemon filling?

I never tasted a lemon cake and have no idea what goes well with it.

First thing that came to mind was raspberry filling.

I like cream cheese filling personally. But strawberry might be good too... Mm...strawberry would definitely be good!

I'm making a lemon cake for a baby shower this weekend and made a raspberry filling for it. I just used some smucker's raspberry 100% fruit preserves without seeds and mixed it with some whimsical bakehouse buttercream{which I love}. I think I will do a thin glaze of the smucker's over the cake before I add the filling as well. But I also like lemon cake with lemon frosting too.

Just about any of the berries will work well with lemons.

You could also do an orange curd or mousse, keeping it in the citrus family. Some people use chocolate with lemon, but I prefer orange and chocolate together. Bananas or a lot of the fruits, apricot for example might work or just a simple light (in taste anyways) bavarian cream filling.
