I have a hard time getting my fondant or buttercreams to a rich deep color such as red, black, or navy. i find it takes so much gel paste and still the color is not deep. I needed a red fondant for a wedding cake and the best I got was a tomato color, so I bought the Red color mist spray and sprayed the cake to get the red. When I need black fondant, again it takes so much gel and the best I can get is a deep charcoal grey. The other interesting thing is what ever is left over seems to turn to dark green as the day goes on. dpes anyone have a solution to this problem?
The colors get deeper as they sit. Try making your buttercream or fondant at least a day or two ahead of time so you will get the deeper shades like you notice with the leftovers.
When needing brown or black I use hershey's cocoa powder (& boy does it taste good!
) . After I get it brown I add black Ameri-color to get the black. Also Ameri-color is better then Wilton colors. I think painting your fondant isn't so pretty looking. I agree with KoryAK, buy pre-colored.
I like making my own fondant. But when it comes to a dark/hard color I buy it ready made. So much easier. Bakers/Americolor/Wilton/Chefmaster are all the same. Some work really well in color some don't. I like idividual colors from all those that I listed above. But when it comes to darker premade is best.

Do you add the cocoa to pre-made fondant, or do you make your own? I have to make a black guitar cake next month (I use bought fondant, but can't get the pre-coloured stuff) and it would really help me if you could explain exactly how you do this (all the kids love the fondant and I'd hate to make it taste nasty with too much black, if I can make it yummy chocolate instead!)

I use the cocoa powder in my homemade MMF & in Wilton's Fondant (I hardly ever use Wilton's, YUCK). I heat up my fondant just a little bit in the microwave. Then I add a little cocoa powder at a time & knead it really well. I keep adding a little at a time (because it is so powdery that the dust will go everywhere) till I get the color that I want. I also add brown Americolor too but don't have to add much w/ the cocoa, that just helps it get a true brown. I add a little black Americolor to get the black but you don't have to add as much as you would if it were white. It tastes really good! It's just like making chocolate MMF

Thanks everyone who replied with suggestions. I will try the cocoa powder mixing into the fondant and then coloring it black.
Buying premade colors is not really an option. I live in Montreal and there is really only 1 baking supply store here that sells the fondant. White can be bought in a large box 11 lbs/$30 but after that, all that is available is the Wilton pre packaged 4 colors which don't give alot of each color and are quite expensive.

With the powdered sugar I bet it will come out a very light color that could easily be colored white with a white coloring~ Wilton has a white coloring. I used to use it a long time ago.

Yes you can. I've done this lots of time. In fact, I've mixed flavoring and MMF with Wilton. Surprisingly, I got the texture of Wilton and the flavor of MMF. HTH.
