My sister wants a strawberry filled cake. I planned on making the cake 2 days in advance.....when should i fill the cake??? Will it get soggy if it sits for two days??? I'm doing a 14,10,6 doubled layered white cake with buttercream under MMF. Is 2 days too long for the MMF? Anybody got a great strawberry filling recipe?

I'd like to know about the filling, too!

I've had MMF sit for several days and it's been fine, as long as it's not too hot.

I had made a cake covered in fondant that had the raspberry filling. Even though I coated it first with a thin layer of buttercream...It seemed to have seeped in. It was very good though (so I heard). I am always trying things out and sending them off with friends. Oh and the cake sat for 2 days. You may have better luck. My filling may have been to this of a consistancy??

I would crumb coat the bottom layer before placing the strawberry filling on it, and also crumb coat the bottom of the top layer before placing it on the filled bottom layer- let it crust first, then put your filling on and assemble the top- it should not seep into the cake and make it soggy. I use the strawberry filling in the sleeve, as it keeps very well, and it tastes great too- it should be fine for days.

make a dam and let it crust before you fill. That helps a bit too.

ahhhhhhhhhh. So crumb coat the layers so the filing won't seep in!!! icon_rolleyes.gif Good idea duh! I'm still unsure about what the perfect never fail yummy recipe would be.....I'm having a hard time deciding b/t bavarian or a preserves/fresh strawberry buttercream mixture. I REALLY wish i could just buy some filling and stick it in======the cake is stressing me out ENOUGH.

If you have a cake supply store nearby, they sell fillings in a sleeve - rasberry, strawberry, bav cream, etc. They are very good and last for days on a cake. Extras can be kept in the fridge for weeks.
