Thanks everyone. When I decide to use fondant, I will first go with Wilton's and then try making my own. However, we have changed gears for our cake and plan to make a tiki mask. We are just going to cut a 13 x 9 into a elongated head and frost with plain chocolate buttercream. We are going to decorate it with candy to make a face. This way, he can decide on a design on a piece of brown construction paper and then just transfer it. Should be easier for everyone. How do I post a picture of it when I'm done?

Wow, thanks for all the answers you guys!

I don't want to use MMF, which I said at first, because I've had fits getting that stuff onto larger round cakes.

The idea of wanting to make my fondant was, like many, because it costs pennies to make as opposed to the super expensive ready-made. I like the idea of saying I made the fondant fresh from scratch because I make everything that way, but it's not worth it if it can be such a disaster. I followed Toba's recipe to the letter, weighed all the ingredients with a scale, let it rest in the fridge overnight, the whole thing, and it still fell apart. I can't afford to have this happen in the middle of a wedding cake.

So for perfection's sake, I'm probably going to go back to reliable, expensive Satin Ice. I'll make more of Toba's for practice, and see if I can get it down, but I don't think I'll count on it. I figure my wedding cake pricing assuming I'm paying full dollar for Petinice, so when I make the fondant, it's just that much better profit for me...but that can wait I guess.

Thanks again everyone!

Excellent advice from everyone.

And homecook, I LOVE your signature quote... that is SO true about finding dessert for under $3 a serving. Brilliant!

Lol! I can't wait to try it all. Today we got some tropical flavored tootsie rolls, microwaved them for a few seconds, rolled them out and cut them into "face paint" for our Tiki man. Pretty easy. We could've used fondant for this but since we only needed a little color, just an accent, I was thrilled with the result.
