I know you're not supposed to refridgerate a cake covered in mmf, but in this situation I HAVE to. once it comes out of the fridge for serving, what should I do to keep it looking good?

I have done this before, many times actually, without a problem. It may sweat just a little depending on the temp differance so it may become a little shiny, not really a problem I do not think.

I always refrigerate my fondant covered cakes. It'll be fine. If the outside temperature is warm it will sweat when you bring it out but that will evaporate as it warms up (I only have this happen in the summer).

I always refrigerate my fondant cakes as well. If I still need to work on them after refrigeration, I let them sit for an hour in room temperature to allow them to sweat and then start working on them again. So far, I have had no problems. HTH.

I too always refrigerate my fondant cakes. If you let them sit out an hour or so they will be just fine. I have never had a problem before....knock on wood.
