This is a two parter: 1.) What flavor of cake (other than devil's food, and not chocolate) would go really well with a Chocolate Ganache? Is there a filling (other than raspberry) that might compliment these? 2.) I am making a two tier rehearsal dinner cake. My question is: Is it ok to make all of the icing chocolate? Is there "cake etiquette" that says that I have to do half chocolate and half something else? The bride and groom love chocolate, so should I just go for it? Thanks for your opinions and tips

In my opinion, chocolate ganache goes with most everything. I personally don't like chocolate and lemon, but many people do. Ganache is excellent with white, yellow, and vanilla cakes, as well as most of the typical flavors.
As for making the cake all chocolate, the only "rule" is what the customer likes. If there are people who don't like chocolate, they won't eat cake.
White cake with strawberry filling and ganache sounds good to me!
Chocolate Rules. Everything Choc. At any gathering there will be people that don't eat this or that. Pnut butter and choc. is one that I bake all the time for family and freinds. A word of caution though, some people are very allegic to pnuts. Many caterers stopt serving recipes with choc.
I love to make a Hazelnut cake to layer with Chocolate cake and a Nutella filling between then Frosted with Chocolate buttercream and Chocoate Ganache, Yummy !!! I also like Butter Pecan or Irish Cream Cake with Chocolate cake and a coconut and nut filling between them.
I agree with alll.....my personal favorite with ganache is meringue buttercream and colette peter's cocoloco cake...alternately, you could add marzipan and almond extract to your white or yellow cake recipe and make an almond cake with the ganache ! Let us know what you decide!
