Even with the lemon, don't you think it would turn brown?
That's what I was wondering...but AB put it in the fridge for about 20 min or so and then next clip was him and this 3 tiered, stacked cake that was bright green! So I'm guessing no then. However, I noticed whenever I rub my avocados with lemon juice, they still turn brown. 
gosh...that does not even sound good.....avocado and sugar just don't go together for me....how did it look?

Avocado Buttercream Frosting
8 ounces avocado meat, approximately 2 small to medium
2 teaspoons freshly squeezed lemon juice
1 pound powdered sugar, sifted
1/2 teaspoon lemon extract
Peel and pit the avocado. Place the avocado into the bowl of a stand mixer fitted with the whisk attachment along with the lemon juice and beat until lightened in color, approximately 2 to 3 minutes. Add the powdered sugar a little at a time and beat until smooth. Add the lemon extract and mix to combine. If not using right away, store in the refrigerator.
Avocado Compound Butter
6 ounces ripe avocado meat, approximately 2 small avocados
1 tablespoon freshly squeezed lemon juice
2 ounces unsalted butter, softened
1 garlic clove, minced
1 tablespoon freshly chopped cilantro leaves
2 teaspoons ground cumin
Kosher salt and freshly ground black pepper
Peel and pit the avocados. Place all ingredients into the bowl of a food processor and process until well combined. Place mixture onto a sheet of parchment paper and shape into a log. Place in the refrigerator for 3 to 4 hours. Slice and serve with grilled fish or chicken.
Avocado Ice Cream
12 ounces avocado meat, approximately 3 small to medium
1 tablespoon freshly squeezed lemon juice
1 1/2 cups whole milk
1/2 cup sugar
1 cup heavy cream
Peel and pit the avocados. Add the avocados, lemon juice, milk, and sugar to a blender and puree. Transfer the mixture to a medium mixing bowl, add the heavy cream and whisk to combine. Place the mixture into the refrigerator and chill until it reaches 40 degrees F or below, approximately 4 to 6 hours.
Process the mixture in an ice cream maker according to manufacturer's directions. However, this mixture sets up very fast, so count on it taking only 5 to 10 minutes to process. For soft ice cream, serve immediately. If desired, place in freezer for 3 to 4 hours for firmer texture.
As Alton Brown's biggest fan, I would have to say that I have no doubt it fabulous. Strange, but fabulous. I have never made anything of his that wasn't.

It sounds gross, but it is really good! I think the icing would be good, too. Adding the sugar gives it a completely different taste.

I love AB but just can't picture avocado buttercream.
This doesn't have anything to do with the icing, but if you make guacamole or if you have a partial avocado in the fridge, if you take the avocado seed and stick it in the middle of the dip and then cover the bowl with saran wrap, IT WON'T BROWN. It sounds crazy, but it's true.
It is the lemon juice that keeps it from browning, the same way we drizzle and toss some lemon juice into fresh apple slices to keep them from turning brown.

The lemon juice was added to prevent browning, teh acidity in lemon juice is the key to prevent browning in anything, apples, pears ect. We have made this in school and it can be flavored with any extract. We have even made cookies and brownies with them. It absorbs the flavors you add to it.
