Cookie Cutters For Chocolate?

Hello,

I have a customer that is asking if I can make something from chocolate with cookie cutters. Does anyone know how to do this? I'm wondering if I can pour melted chocolate into a cutter, cool it, then pop it out. Will it come out okay or will it stick or break? Or can I somehow make a sheet of chocolate and use the cutter to cut the chocolate like cookie dough? I tried to search CC and google to find information on this but haven't had any luck.

Anyone that's used cookie cutters with chocolate that can give me some advice?

Hi, Julie!

I have seen this in demonstration, but have never tried it -

Tape a piece parchment paper or acetate to a cookie sheet. Pour out and level your melted chocolate to the thickness you require. Allow to cool until it loses it's shine, but is still slightly tacky (think soft, but not melted, chocolate, between your fingertips). Cut out your shape, then remove the cutter immediately. You might need to spray the edges of the cutter with cooking spray, then wipe excess gently away. Refrigerate for about 20 minutes, or until the shape is completely set.

You can remelt the surrounding chocolate and make additional shapes, but I would do this no more than 2 times. Break the rest up into thin chunks and use as side decorations for dessert cakes.

I know of 2 other ways.

I saw on a Food Show some time ago, the french guy that did chocolates.... I forget the name.

Anyhow he used "playdough" as a mold sometimes he would roll out the playgdough, cut out the shape with the cookie cutter, then fill in the gap with the chocolate. (I would make my own playdough to do this, I know the kids stuff is not toxic, but you know.

The other way I have seen this done is to put a parchment on top a cookie sheet, put all your cutters on top then poor the chocolate, about 1/4 inch, thick, cool and then bag with the cookie cutter. Then you give the cookie cutter along with the chocolate nice gift, if you wrap it in nice celophane or whatever.
