How Does Royal Icing Hold Up In The Fridge?

I am doing a doll cake for Saturday which I need to finish on Friday for various reasons. The cake will be filled with Bavarian cream so it will need to be kept in the fridge. The doll's dress is going to be gypsy style so I was planning on doing fondant ruffles overpiped with Royal Icing and painted with gold lustre dust. Now I can deal with the fondant going in the fridge, I just dry it under a fan while it is coming back up to room temperature, but will the humidity from the fridge break down the Royal Icing. I have done very little with RI so I really have no idea. If anyone can enlighten me I would be very grateful.

Royal piping should be OK. The risk is condensation when you take it out. If you make sure the room is cool, the condensation will be less. Give it some time and it will evaporate.

Thanks JoAnnB. So I guess the same method as I use for drying the fondant would work for the RI. Good, I had visions of the RI dripping off the cake, which would not be a good thing.

Oh, not what I wanted to hear riana. Please, anyone else with experience, fridge or no fridge for the RI?

I put my course 2 cake in the fridge and slowly ate it over several days- the flowers were still the normal lovely RI crunchiness! and those were on Wilton class BC

Ok, I'm steppin out on a limb here, but antoinia74 has been made famous for her royal icing recipe. She uses this stuff ALOT, so I bet if you pm her, she will gladly tell you what you need to do.

Royal on buttercream CAN melt in the fridge. Piped over dried fondant or gumpaste it should be fine.

Thanks to you all for your tips. Very helpful. Good idea to PM Antonia, I'll do that too. But feel a bit more confident that we will not have a total meltdown, especially since it is going to be piped on fondant.

keonicakes, I would love to see Johnny Depp marching around the streets here but no such luck. I am a sucker for a man with that amount of make-up! When I told my 14 year old niece that Orlando Bloom has been here a few times, she just about died. At the time I had no idea of who he was, I could have tripped over him and have had no idea.
