OK....I have someone who wants the following flavors for fillings: bavarian creme, pineapple and raspberry. No problem except for the following: 1. These will all be in between just a two layer cake (kind of a bullseye effect), and they want "A LOT" of filling, 2. They do not like "thick" cake, so it will basically be a one layer cake torted, and 3. They want the whipped buttercream.
I'm worried that the whipped buttercream will not make a good enough dam. Does anyone have any suggestions/tips on how to do this?

I would make a very stiff bc dam, and pipe it two or three layers thick. I did this for several cakes this weekend and it worked very well. It was the first time I've specifically used stiff bc in order to put a nice thick layer of filling (one had cookies and cream filling, another had cheesecake filling, another had raspberry mousse, and another had strawberry filling. No problems!
I don't think they will notice the dam of the thick BC due to all the fillings. But you might want to mention it to them that this is the only way to do it before you actually do it. Good luck!
