I will be making a series of practice stacked mini cakes, drive around and give them to family members tomorrow. They will be 5" and 3" layers. Should I dowel them since I will be practicing delivering them assembled?

under normal driving conditions, they should be fine. If you have any doubts about the stability, a center skewer or a thin straw in the center should be sufficient.
