I made some recently with some leftover icing. it was standard buttercream with shredded coconut (put in a food processor so it is fine) and a couple of drops of coconut flavoring.

I just stired that up with left over chocolate cake...mmm good. If you wanted just a coconut center. make small balls of the icing/coconut mixture and freeze them. The wrap the frozen ball in a chocolate cake ball mixture. so much for his secret recipe.
