Coconut Cream Cake

I just got an order for a coconut cream cake due on Thursday. The first thought that came to mind was to use a DH white cake mix, made as directed but also add an extra egg and a small package of coconut pudding. I've read that people do this with other cakes so I can't see it not working.

I was thinking that I would use my homemade vanilla pudding as the filling and frost it with my regular buttercream recipe and then cover it entirely with coconut.

Does this sound okay??

I'm not sure the coconut pudding will give it much of a coconut taste. If you were going to use a white cake mix and do that I would probably add in some coconut flavoring or some shredded coconut.

DH does make a coconut cake mix. I have used it adding the coconut pudding and liked it.

I wish I could find a coconut cake mix and a banana cake mix. I know that DH makes them but I can't get them.

I use BC French vanilla add some coconut and some coconut flavoring I don't add anything else to my mix.

What about using coconut milk to help spruce up the flavor?

Might be a good idea use coconut milk for instead of the water or milk but I would still add some coconut.
Go to: canadian living test kitchen and do a search for coconut cream cake and you will find a scratch recipe for it.

I've used the coconut flavored liquid coffee creamer in place of water in the cake mix and it is delicious.

Duncan Hines has a coconut cake have you checked for it at your stores? I believe I bought mine at Walmart.

I know that DH makes the coconut cake, my grocery stores just can't get it for me. I wonder if I could order direct from DH. The problem is that if I could, I'd probably fill my basement with the minimum amount I would have to order!!
