I did a search of the forums, but didn't find anything related to this, so please forgive me if this has been discussed before -- I did try to find it!

Has anyone made MMF in a Cuisinart Food Processor? They have extremely strong motors, come with a dough blade, and the larger ones would seem very capable of handling this. Is there something wrong with this idea?

My old, smaller CFP is now 20+ years old, and I'm going to have to replace it in the next few weeks. The original work bowl is finally just cracking to pieces after years of dutiful service, and I'm not willing to invest in a new bowl for a motor that, while working fine right now, IS over 20 years old. I'll probably get the 11-cup model, and I plan to try MMF in it, since I don't have a KA. Am I being overly optimistic? I use my CFP constantly, so replacing it really has to take a higher priority than the KA I'm lusting over. icon_wink.gif

Opinions, anyone?
Thanks!

Not sure if a food processor would work, good question though. If in the least you find out it does not, you can always mix it by hand. It is very sticky at first, but comes together quite quickly into the satin white goodness that is fondant, a lot of fun to make, so do not fret. Kids would love to make it for sure.

Best...

Making it by hand is simple, but a bit messy. However, this prevents you from adding too much powdered sugar. If the dough is too dry, it will crack as you try to apply it.

Just use a big bowl (greased with shortening) Add only about 3/4 of the sugar to beging. Once it holds together, just dump it on a greased surface and knead it. sift on a bit more sugar if needed so it isn't sticky. Perfect everytime.

Ummm... I know how to make fondant by hand, that's not the topic, folks. icon_biggrin.gif

I'm wanting to know if anyone has tried making MMF in a CFP. I know it can be done in the KA stand mixer, but I've been wondering why it wouldn't be possible in the CFP? It's a very powerful, direct-drive motor and it comes with a dough blade, although the instructions only cover yeast doughs and sugar-based doughs. The CFP does handle cake mixes, by the way.

Just wondering if anyone's actually tried it? icon_smile.gif

No kidding! icon_biggrin.gif Maybe I should start lacing my fondant with a little more alcohol than what I get from the extract flavorings!!! (And just for the record, the peppermint extract + fondant was NOT a good idea. Yuck!)

So, apologies if my prior post seemed a little testy, it wasn't meant that way at all, I just felt like the thread was getting a bit derailed. Too many years, I guess, of preaching to students, "Stay on topic! Stay on topic!" icon_lol.gif

Mea culpa,

If you try it, let us know, but I would like to suggest that you grease the bowl and blades before adding the ingredients, otherwise you may never get the MMF out when it is done.

I've never even made fondant, BUT I have made bread dough in my KA processor many times with the dough blade. I'm sure the fondant will be a little harder on the motor than bread dough. I'd give it a try and if it sounds like the machine is really struggling I'd stop.

Perhaps try making half the recipe to start, just to see if it works. That way the MMF will have enough room to work around the bowl.

I have the Couisinart too, I would think that it would work. Use the dough blade for sure. I may try it to see how it works too. That motor can handle a lot of stuff.
