Help!! What's The Best Way To Do This?

Ok, so I'm an idiot and overbooked myself with activities in the upcoming week and have 2 cake and cupcake orders to do. I am considering baking all the cakes this weekend and freezing them, and preparing the icing, etc. at the same time. Then during the week I just need to thaw and decorate them. The only one I'm concerned about is that I need to make a pirate ship cake and 8 cupcakes to go with it. For the pirate ship, should I bake the layers, freeze and then thaw it out and assemble and then refreeze to carve? Or should I just go ahead and assemble and carve it while it's still frozen from the original freeze? Then, after it's carved should I ice right away or wait for it to thaw out completely before icing it to avoid moisture problems. This is my first real paid job and I don't want to screw it up!!! icon_biggrin.gif

Can I freeze the cupcakes before decorating them? Anyone ever have a problem with them being soggy in the wrapper upon thawing?

I have noticed in the past when I have froze cupcakes, upon thawing - the wrapper starts to separate from the cupcake

anyone have any tips on freezing the pirate ship cake??

I've made a pirate ship cake before....and I stacked/filled the layers and then froze them. When it was time to decorate the cake, I removed it from the freezer, carved it while it was still frozen (worked wonderfully with minimal crumbs) and then iced!

if your using Butter cream to ice the cake i would let it thaw first before applying the icing, if the cake is frozen when you put the icing on it, the icing will set fast then crack as the cake thaws and settles.
(I had this happen recently.)

Good advice! I have also had this happen....in the case of my pirate ship, by the time I got finished carving it (took a while) it was thawed enough to ice....but the cake will expand as it thaws so be careful!

I have no clue about the cupcake issue but for the cake I would stack and fill then freeze to carve. I learned that lesson the hard way. Frozen cakes carve a million times better.

Thanks for all of your help!!! I love CC and everyone here!! I think I will just wait and make all the cupcakes (only need 12) on Thursday night while I'm decorating the pirate ship.

Excellent advice on the pirate ship...thank you!! this is my first carving attempt so I'll let you know how it goes when I'm done!! icon_smile.gif
