HELP! I'm running out of time and everything was going just fine then I looked over at one of the tiers and it everything was falling off. I've attached a picture. This is after I took the top border and beads off, I've redone the top and string work all the way around only to get back to where I started and see it's coming off again. What in the world is happening? It's not happening to the other tiers. Can anyone shed some light on this for me, suggest how to fix this anything? Oh my, I wish I could help you. I can't think of what might have caused this; You didn't move it? Earthquake?? Not likely in TN!

If I am thinking right & looking at your cake right, It looks to me like your icing was too thin there. Its happend to me & I had to re-ice my cake because it kept cracking more & more.

Were the sides of your cake dry enough to grab the icing, or were they on the damp side, like if you left it in the pan until it cooled, then tried to ice it right after it came out of the pan.

If the sides are damp, the icing will pull away. Especially if it is a heavy icing, like a crisco-based icing. If you notice, it is pulling away where the garland starts, which makes the icing even heavier.

Oh yes, it was dry. I baked them days ago, froze them and crumb coated them yesterday. They were very dry since I didn't even try to decorate them till about 6:00 this evening. Also, the garland DID come all the way to the top, the picture is actually AFTER I filled in the crack and smoothed it back out which took forever I built it up and was just gonna add the string work and garland higher, but when I got back around the where I started, it was falling again. I'm at my ends wit! I've NEVER had this happen, and what's weird, all 4 tiers were done with the same icing, the other three are fine.

what kind of filling did you use? I've had strawberry filling get through a dam before and it makes the icing separate some. Maybe whatever filling you had for that cake is coming through on that layer?

I'm sorry if that isn't helpful but just a thought.

It looks like it is cracked evenly all the way around suggesting a shifting layer. Could that be the problem? I think I would scrape and re-ice this baby icon_sad.gif

Did you crumb coat and let it crust before applying the topcoat of icing? When looking inside the crack, I do not see a crumb coat under there.

Often a crumb coat is necessary to create a primer layer, for the icing to coat and stick better.

i didnt see a crumb coat on the cake. i know you said you did a base coat. in my past experience, too thin of icing will do this and too heavy of the scallops or drapes. i would deff. recrumb coat it. then redecorate the scallops with smaller tip.

Okay, got it figured out after being up ALL night working on this cake. Teresa, I do believe you were excatly right when you said it was wet. I ended up stripping ALL that icing off to redo the entire cake. In doing so, the cake was very wet, and when I lifted it off the tray it was on to clean around the bottom, there was pretty much a puddle under the cake. Here's what happened. The cakes were frozen. I did do a crumb coat, just like always, not to thin at all. As a matter of fact, the crumb coat was so good...LOL...get this......the cake was COMPETELY sealed! That means when the cake began to defrost, the moisture had no where to go, thus...wet cake! Next reaction, icing that won't stick! WALA!!! I stipped it, let it sat while I decorated the other three tiers, went back to it and no more problems with it at all. My next panic was the wedding was outdoors, and we've had nothing but VERY windy days, and today it was supposed to get up to 76, (not sure what it got to). After much prayer, I was very blessed! No problems, attached below is a picture of the finished product all set up! I do believe with all the trouble I had, it turned out to be my most favorite cake I've done. I'm working on another smaller cake tonight, frozen, but you can bet I've stuck my cake tester thru the icing all the way into the cake this time....LOL. Thank you to all who tried to help, don't know how I ever lived without ya'll. Here's my picture. icon_smile.gif

I can relax now Aimee. I had to come home and do another cake for pick up in the morning before church. This was a really hard weekend, had 4 cakes and this wedding with grooms cake. No sleep last night, took a 2.5 hr nap at noon, now it's going on 4 am and I'm just finishing to go to bed, and gotta get up for church in the morning and I have to sing....and here I sit on CC, now that's ADDICTION!
