and it has to be kept cold? Have any of you ever had this problem? I've really never thought about asking a customer what size there refrigerator is? But it has come up recently. Any thoughts?

Is it going to be used in a reception hall, or at the customer's house? Maybe the hall can keep it or if in the home, She could just wait to pick it up until the last moment.

If a cake requires refrigeration, I always check to be sure they have room. If not, I suggest choices that are better at room temp. Otherwise, there can be liability issues.

If you deliver a well chilled cake, you can help keep it cold for a while by using blue ice in the box, as long as it isn't in the sun or in a very warm location.

I've had this come up before and if they don't have room, I tell them to just let me keep it refrigerated and they can come pick it up maybe an hour before the party. I don't have 2 fridges yet and so sometimes I have to get very creative, removing shelves etc. to make them fit in my own frig!!

In the winter, my customers would sometimes let the cake chill in the back seat of their car or garage as long as it wasn't freezing outside :O)
