I am making a cake for a competition sunday, where the cakes will be eaten after the winner is found. I have the cakes baked, it is Toba Garretts yellow cake which she states can hold up to two weeks in the fridge. I baked it yesterday. I am filling it with lemon curd and strawberry buttercream. If I make the cake today, will it be soggy and gross by sunday? It will be kept in my "cake fridge" all the time, and my fondant holds up great in the fridge. I am just not used to buttercream fillings so a bit unsure. Filling the cake today would give more time to decorate.

Help please!

Thank you! I haven't tried the two weeks, but then again, cake would not survive that long here icon_lol.gif
