Can You Refrigerate Layers To Quickly Cool Them?

If you need to cool a cake in a hurry, can you put the unwrapped layers into the fridge for a short time to speed the cooling process up? Also, has anyone ever had a problem refrigerating layers wrapped in saran wrap for a few days? When I wrap my layers and leave them on the counter, they tend to get soggy and mushy. Does refrigerating the wrapped layers help? I don't want them to dry out too much but I don't want them to get soggy and gross either. Thanks in advance for any help out there.

I like to wrap them in plastic wrap when they're still warm and freeze them for a day or two. I find it makes them even moister. I don't know about refrigerating unwrapped or for extended periods, but putting them in the fridge until they cool certainly couldn't hurt.

I actually put mine right in the freezer to cool them quickly so Im sure the fridge would be fine. I put them in the freezer in the pan til they cool enough to take them out then I take them out wrap them in saran wrap and foil and put them back in the freezer. hth!

I do the same as niquealodeon - works great.

I wouldn't keep them in the fridge any longer than a few minutes just to cool. I think the fridge dries them out or messes with the consistency (even wrapped for a few days) as you seem to have found out. I find it OK to use fridge or freezer to cool off just enough to handle but better to store wrapped in the freezer.

I put them in the freezer immediately out of the oven for 10 minutes, then get them out and wrap and freeze. Works like a dream!!!

I wrap mine a few minutes out of the oven then put them in the fridge for the next day. They do seem more moist that way.

I too would like to know how long you can keep them in the fridge, I have several coming up and would like to bake a couple days ahead.

anyone?

I was asked mid day yesterday to make a retirement cake for a coworker for this afternoon. I work full time and pick my son up after work. I baked the cakes last night and stuck them in the freezer to cool so I could work with them. It worked great and I managed to make and decorate a two tiered cake in one evening all while grilling steaks and nuking potatoes for dinner - and cleaning up! I will get pictures today when I run home to pick the cake up.

Thanks UGoCakes icon_wink.gif I hope I don't have to do it again but at least I know that I can in a pinch!

I took pictures but my computer here at work doesn't have card reader slots. I'll post the pics later. Everyone at work was very happy with how it turned out!

I always wrap mine and put them in the fridge to cool--sometimes a day--sometimes two. I have never had any trouble. Make sure to wrap them completely, though. Good luck!
