Another Question About Cheesecake Frosting

HI

I will be decorating a cake for my grandmothers birthday and giving it to my parents to deliver which will take them a 2 day drive. The first day will be about 5 hours and the second day will only be a couple of hours. My question is: would cheesecake icing be okay for the 5 hour time frame? When they get to the hotel they will be putting it in the fridge.... I really would like to do this flavor of icing.....it would compliment the cake so well.

If not what other flavor would go with a cinnamon swirl cake?

Do you mean cream cheese icing? If so, I would see if you can pack it in a cooler or something- it's ok to sit in a cool room for a couple of days, but traveling in a car where it might get warm could be iffy.

You could use a cinnamon buttercream. Just make a shortening based buttercream and add either cinnamon oil or a good quality cinnamon. The cinnamon flecks in the icing might be nice.

If the cake is going to be kept cool, you could use part butter in the buttercream.

If you have a box for the cake, you can put blue ice in the box to help keep it cool.

I think marzipan would taste delish on a cinnamon-swirl cake!! You could do a thin layer of BC than seal it in marzipan and do your decorations in royal icon_biggrin.gif The marzipan would keep it preserved and moist for the drive.
