If i put it in the fridge right away after making it. how long can i have it there til it's no longer good? What's the best way to make it smooth again? can i microwave it at low?

It is fine in the fridge for a few days, but it can be frozen. To re-melt, use a double boiler set up (bowl resting over a pan of just barely simmering water). Melt it fully, don't whisk to avoid bubbles, use a spatula a stir gently until it is fully melted.

i made some the other day to cover a cake... the left overs i covered and put in the fridge.. then i pulled it out and let it sit till room temp and used it as a spread on an ice cream cake.. it was fabulous!!
i was told you can keep it for a few months if frozen.
