Will The Cake Still Be Good??

I'm doing my class#3 final cake this weekend. I'm doing the 6" Lemon wiht Lemon Cream Filling, and the 10" Spice with Cream Cheese Filling. I will bake and fill on Tuesday, and class is on Wednesday so cover with Fondant and decorate then. This cake is for my 7th anniversary, so will be served at the party on Friday night. will it still be good? I know you don't need to referigate fondant, but what about the fillings? Will they be good 3 days later?? Do i need to referigate anyway??

That is a pretty long time, but the fondant will help seal the cake, so it should be OK.

Yes, it should be refrigerated. There is a small risk of condensation. If it happens, it will evaporate fairly soon, just don't touch the cake until it is dry. You can minimize that, if the room is cool when you take the cake from the fridge.

well i've decided to move the party to thursday night, so the cake won't have to sit as long. now, with putting the fondant on wednesday night, do i still need to referigate it afterwards??

The cream cheese filling is fine - but what is your lemon cream filling made from?

1 In a saucepan over medium heat mix the white sugar, flour, orange juice, orange zest, lemon juice and the egg. Cook until thickened. Remove from heat and let cool completely before folding in the whipped cream. Makes enough to fill one 2 layer 9 inch round layer cake.
