I hope to start a business in the near future. I am in the midst of the whole thing. I know I will need good mixers. I have a small one I use at home. What commercial mixers do you all recommend?

Well, you may be looking for a true commercial mixer, but I would always recommend the Kitchen Aid Mixers. I have two, a 4 qt and a Professional 6 and I love them both! HTH

We use the KA at the bakery that I work at. We have the 5 qt. Artisans. We have to make icing by the bowl, but it's always fresh.

I have been thinking about buying my KA (aka Betsy) a big brother. I am thinking maybe a Viking or the big KA 600. I would love to hear everyones comments on your post as well.

Can't really answer the "commercial brand" question, but I have two KAs....a 5 quart Artisan and the Professional 600 6 quart. I love them both, but must say I prefer the 600, only because I can double a batch of icing in it with no problem! Worth EVERY penny!
