Hey-- I wanted to glaze my cakes with amaretto flavored simple syrup. I had seen a recipe calling for half sugar/half water. Brought to a boil til sugar dissolves and its supposed to be ready. I was expecting it to be thicker--like a syrup. It seems so watery-- Maybe that's what it's supposed to be??

Yes, it will be watery. Not thick like a usual syrup. Boil it for at least 10 minutes and it will be okay. Let it sit until it gets lukewarm or cold and you will notice that it will thicken some, but still not like the syrup we are all used to.

Simple syrup is normally used for moisture and sweetening. If you wanted a glaze, you can use powdered sugar and the liquor and add the normal stuff you might add for a simple icing (butter, milk etc)

the syrup will be watery so that it can soak into the cake well. don't freak out because it's not thick, this is the way it's supposed to be. icon_smile.gif
