how long can a cake stay at room temp and still be good if nothing on it had to be refrigerated? Also how can you tell if a cake has gone bad besides mold or is going bad?

I know that fruitcake with fondant can last for weeks, but regular cake with frosting I would say 2 to 3 days tops. I don't know if it would go bad that quickly but it would definetly start to dry out and I wouldn't want to eat a cake any older than that.

Not sure I can really answer your question, how long would really depend on the cake ingredients and environment. I'v never had a cake go bad, but mold would be a dead give away of course. I think other than that, just an off taste.

Cakes may last a longer than you think.The record for me was 9 days.

I didn't intend for the cake to sit so long. It was my first fondant cake and I wanted to take pictures of it. But then life interfered, sufficed it to say it was over a week later before I could take the pictures.

The cake was stored in a cake dome, unrefrigerated; it was MMF with buttercream (shortening only) and had a filling of raspberry jam. I thought there was no way this cake could be eaten. But, after I took the pictures, I had to cut it. It looked and smelled OK so I tried a small bite. I couldn't believe it the cake tasted perfectly fresh. So, I tried a few more bites not only was it ok but it was quite yummy and moist. The whole cake was eatened by several folks and nobody got sick. My guess that the fondant sealed of the cake really well and kept it preserved.

thanks for the replys guys and the website is very helpful. The cake is buttercream (no butter) & butterscotch pudding filling i did refrigerate just to be safe but its been at room temp for about 3 days. Its in the refrigerator now so i guess it will be ok. Thanks again.
