I just tried a doctored RV mix and it was B.A.D- bad! I don't get what all the fuss is about RV cake ...on to trya new recipe!

I tried DH Red Velvet cake mix for the first time a few weeks ago and doctored it according to a recipe I found on this site. I didn't care for it too much. It was okay, and I could catch a bit of the chocolate in it, but I would rather just have straight chocolate.

Also, the dye didn't really win my tummy over either, but I won't get into that. icon_surprised.gif

I am an Old Southern Red Velvet Cake lover - DH version sucks! Try one of the total scratch versions here on CC or I've listed my mom's recipe below. I don't have much luck with scratch cakes, but I have used this one since I was 11 yrs old. I haven't made one since I became a CC addict, but I may have to try it again when I have time.

Here's my mother's recipe for RVC & RVC Frosting:

1/2 cup shortening 3 level TBS cocoa
1-1/2 cups sugar 2-1/2 cups sifted cake flour
2 eggs 1 cup buttermilk
1 tsp vanilla 1 tsp salt
1 tsp butter flavoring 1 TBS vinegar
1-1/2 oz bottle Red food color 1 tsp baking soda

Cream shortening, sugar, eggs, flavors together. Make a paste of cocoa & food coloring, add to first mixture. Alternately add flour & buttermilk. Mix soda & vinegar in small bowl, add to batter. Blend. Bake in 3 9" or 10" round pan for 20-25 minutes at 350 degrees. Let cool completely. Cover with frosting.

Frosting:

3 TBS flour 1 cup shortening
1/2 tsp salt 1 cup sugar
1 cup milk 2 tsp vanilla
1/4 tsp butter flavor

Cook milk, flour, salt till thick, stirring constantly. Let cool. Cream shortening and sugar well, add flavors. Combine with 1st mixture, beat well.

do an internet search and see if you can find a recipe for an original- they used beets to get the red color and didn't use red dye at all.

Sarah's Red Velvet recipe on this site is the best! Moist and easy to make. I got rave reviews with it so you might give it a try.

I have never met a RV mix that I like. I grew up on scratch ones and the flavor is so much better. To me it has a chemical taste and the icing they suggest with it just isn't the same. The one on CC is REALLY close to my recipe also.

One hint so you don't use all that food coloring. Use half of the amount in red coloring and the other half water. The red is just as deep when i have dried it both ways.

What brand coloring do you use? Americolor? Wilton? and which shade red? Thanks!

My recipe doesn't call for Gel (wilton/americolor) it calls for the liquid red food coloring like you find in any baking isle at the grocery store. I never thought about just coloring my water with the gel, will have to try that sometime.

My recipe is a little bit different

2 3/4 cups plus 1 tablespoon sifted cake flour or 2 1/2 cups sifted bleached all-purpose flour
2 tsp salt
2 tsp baking powder
1/4 tsp baking soda
1/4 cup hershey's cocoa
1 ounch red food coloring
1 1/2 tablespoons water
1 cup unsalted butter, softened
2 cups sugar
3 large eggs
1 1/2 teaspoons vanilla extract
1 tablespoon orange zest
1 cup whole or lowfat buttermilk

Sift flour, salt, baking powder and baking soda together twice. In a small mixing bowl, whisk the cocoa, red food coloring, and water to a smooth paste, and reserve

beat 1 cup butter with mixer until creamy, add the sugar, 1/4 cup at a time, beating about 15 seconds after each addition until the mixture has lightened in color and become fluffy, about 2 minutes or so. Add eggs, 1 at a time, the vanilla, and orange zest, beating for 15 seconds after each addition. Add the red cocoa paste and mix until evenly incorporated.

Add the flour mixture to the butter and egg mixture in thirds, alternating with 2 additions of half the buttermilk. To avoid overworking the batter, gently mix with a wooden spoon or rubber spatula after each addition, until the ingredient is just incorporated.

Divide between cake pans and bake until done 30 or so minutes.


Then I use a cream cheese frosting...

The cocoa paste makes a big difference and there isn't that much food coloring.

For me it's really all about the cream cheese icing. Can't be Red Velvet cake without it!
