My cakes bake up so nice and tall now that I am using the bake even strips that I keep running out of icing!!!! Arghhhhhhhhhh!

I'm making a Birthday Cake for my hubby's nephew (I guess that makes him mine too icon_confused.gif ). It's so nice and tall but I am now in the process of making my second batch of icing. Which, btw, has to cook and then cool for at least an hour and a half. I've been up all night working on this cake and am sooooooo tired but the party is today so I am up for at least another couple of hours or 3. I think I need help with figuring out how you know how much icing you need for cakes!

Any help would be appreciated icon_smile.gif

Definitely! And much more level, too. I usually don't have to do any trimming when I use the bake even strips (which is good for my waistline icon_wink.gif )

They do make the cakes so nice and even. I like mine a lot, but........... I actually quit using them so I have a crown to trim off for cake bites. icon_redface.gif This way I don't have to make a special cake for them.

If you don't trim your cakes, you must leave that crust on them when you decorate. I thought you were supposed to trim it off?

I love the cake strips too! When my pan is too big i use a damp kitchen towel to wrap around.

WHen I got my new oven I had to quit using my bake even strips....they don't work well at all in my new oven... I have one that bakes evenly on its own...and my cakes come out beautifully...

When I use my strips they dry out in the oven so bad that the edges have browned and it looks as though it could start on fire the next time I use them.
Is this normal?
So, now I am afraid of them!!!

What icing recipe do you use?

I used my strips twice. They never worked for me. My sister who lives 3 miles from me uses hers and they work wonderfully. Somehow I ended up with two cake levelers so I just use those. I like the fact that I can make me a little "cakewich". Cut scrap of cake in two and fill with frosting.

This is the Bittersweet Chocolate Frosting Recipe that I use. It's well worth all the waiting icon_biggrin.gif
