Ok, maybe I'm re-inventing the wheel here but I'd never seen this done and it worked for me. I used one of the frosting tips to pipe some really gooey, fudgy filling on my cake that I had moistened with chocolate simple syrup. Before, every time I tried to spread it on, it pulled up tons of cake. This way everything stays put and the filling is evenly distributed. So...thought I'd pass this on to anyone else who was having this problem. Hope it helps!

i use a similar technique..

use disposable bag and cut of tip so big opening, no tip. fill bag and pipe it on. bead will flaten when top is put on.

when done...no clean up (l live NOT to clean!)

Sorry all, it's not a home made recipe. It's a fudgy filling I had gotten from the cake shop where I'm taking classes. I am planning on making it myself using a ganache recipe adjusted for fillings. I'll let you know how that works.

The chocolate simple syrup is really easy.

Sugar and Water 1 to 1 ratio (I usually make 3 or 4 cups at a time as it keeps in the fridge quite nicely.

1 tsp. pure vanilla extract

1-2 tsp. organic chocolate extract ( I get mine at Whole Foods Mkt)

Bring sugar and water to an easy boil, washing down the sides occasionally. Simmer for one minute. Add vanilla and chocolate extracts. Refridgerate until needed.

You can just use vanilla for a plain syrup or other extracts like lemon for other cake needs.

I pour some in a smaller container to dip my brush in so that crumbs don't get into the main syrup container.

Thanks for the recipe. I guess it will wait until next time as I don't have chocolate extract. And I just dumped my cheesecake all over my oven and floor. Will be busy for a while.
