why do some people prefer the 3 inch pans instead of the 2 inch?

i like them better because i la la la love the height factor! and when "torting" you get more layers out of the 3" inch than you do the 2!!!!!

i also like the height difference, sometimes 4" (2 2" layers) is too tall.

I am planning to buy more 3 inch pans because my 2 inch ones just look so much smaller.

I was told by a fellow CCer (and hadn't thought about it quite in this way) that you can always make 2" cakes in 3" pans, but not vice versa. I took that advice and bought 3" pans- now I have many more options! I also look at it this way. With one 3 inch pan you accomplish the same thing as two 2 inch pans, AND it is done with less outside cake surface. What I mean is- you double the amount of harder outer crust that is not quite as delicious as the inside, when you use 2 inch. I hope I make sense???

i know what you mean. i also like using one pan, not two. less clean up. also, you know after its torted it will stack right... with 2 different 2 inchers they don't always aline right
