I would charge about $3 per person plus another $50-$100 for the gumpaste flowers because of the length of time to make them. So between $150 and $200. And I think that would be really reasonable. You could likely go a lot higher depending on your area and the average prices. I make cakes from scratch and use butter and cream in the icing, so that would have a bearing too.

I am in Ottawa, Ontario, Canada. You are right, you need to go with your going rate per serving, but you need to add on for the gumpaste flowers as they are labour intensive. Since my standard price per serving is $3, I was looking at a minimum $100 for the stacked cake if it had just regular buttecream trims, anything like gumpaste flowers would be extra. This design has a fair amount of gumpaste flowers on it and though these are simpler to make than some, there is still a fair amount of time involved. In fact, I would think in some places you could get closer to $300 for the cake just because of the flowers.
Gumpaste flowers are usually added to the cost on a per flower basis.
