For those of you that make the number cakes, do you use pans shaped like numbers, or do you sculpt the numbers out of a square cake?
If you sculpt them, how do you do this?
Do you freeze the cake first?

I print up the size number I need. Freeze the cake. Cut out the number and then lay it on the frozen cake and cut around it like a template. Crumb coat the cake while it's still frozen, less crumbs that way.

It would also depend on which number you were doing too how you would cut the cake.

I cut them out of cake, I use a sheet, loaf or ring pan depending on the number. For example if I was make a "3", I would use 2 cakes baked in ring pans and cut them up to make the "3".
