Convection Oven Problems

I just moved into my rented kitche last week. They have 2 convection ovens, 1 gas oven. I've only used 1 convection oven and my cookies turned out ok. i only over did 2 batches and learned what temp and time to use. Now, the cakes are another matter. They take forever to bake. I even tried 2 flower nails in my 9 x 13 pan, thinking maybe that would help, but it didn't and there was a big hump on my cake. it took over 30 min. to bake! Any ideas? I'm thinking of just firing up the gas oven. any suggestions will be appreciated.

I bake in my convection oven at 310 degrees and it takes a little longer sometimes depending on the size of the cake. Try turning the temp done you might want to get a oven thermoter too.

I also bake in my convection oven 25 degrees cooler and my 9x13's still bake faster.....I would strongly suggest you get an oven thermometer and check that!

I agree w/ getting a thermometer. I bake in a convection oven exclusively. I set it at 350 and the convection converts to 325. My cakes come out perfect each time. I bet the heat guage is not caliberated properly on the oven you are using. HTH.

I don't know why your convection oven is taking LONGER to bake. Have the owners had it calibrated?

RE: "The Hump"- What is your fan setting? This is GREAT for cinnamon rolls, but, it is "hump maker" for cakes! Even cake strips don't help. I STILL haven't figured out how to rid myself of the dredded hump!

I've considered firing up the gas oven myself!

thanks all. their thermometer reads at 325, or 330, right in there. I forgot about the fan speed. i think there is a lower setting. I'll try that out. Thanks for the help all!
