Just got my first cake order for this Saturday! The party is for 35 people. What size rectangle pan should I use? Instead of torting, I'm thinking of making two cakes and putting the filling in the middle. Will that be OK? Also, how much do I charge--I was thinking $35.00--does that sound about right? If I use IMBC, is the consistency good to pipe a shell border? Sorry I have so many questions. I need to call her back this afternoon with a price, so if anyone can answer quickly, I'd appreciate it.

A 11x15 pan is a good size. Using two layers is fine but it might be better to torte. I used two layers for 11x15 once and it was too heavy to carry. That just added to the stress of tripping and dropping the cake. I'm not sure about IMBC. I've never made it. Depending on decorations, $35 should be ok for single layer. If you use two layers, you should probably go up to $45-$50. Hope this helps. Good luck!

Congrats on your first order! IMBC is fine for piping a shell border. I don't charge for cakes, so I can't help on price, but I think $35 sounds about right. Good luck!
Baking 2 - 11x15 cakes would give you way too many servings....What I would do is bake an 11x15 cake and add your filling by putting it in an icing bag with a tip 4 or 5, push tip down into the cake and squeeze out filling. You do this every 2 inches or so, until your cake is completely filled. Obviously, this works best with smoother jam or creamy mousse fillings - chunkier fillings would be difficult. It's like filling a jelly doughnut!!

I too, would also "torte" the cake "cutting it in half, lengthwise through the middle, like this [---------]
And the IMBC or any type of whipped frosting I also prefer to BC when I have a filled cake.
I find that BC and a filling are just WAY WAY too much sweetness for my taste.
An 11x15 should be sufficient for the amount of peeps you want to serve. If you serve the cake in 2"x2" squares you can probably get 35 to 40 servings.

I double layer even the 12 x 18 it is what the customer wants and I have done it for her about once a month for over a yr. I have a wood board I use under it, I cover the wood with clear contact paper and then cover again with Wilton's fancy foil. I get the board back so I don't have to charge her for it and she has been doing this so long I don't worry about it. She even brings back the sheet cake box, and that saves her some the next month.
