My 16 year old daughter and I have gone through Wilton 1 and 2 and are having SUCH a blast! Course 3, here we come! I don't sell my cakes. Just make them for friends and family. Now my daughter is taking THAT away from me. She's making her own birthday cake as I type! icon_cry.gif Oh well, she's doing such a great job at this. She's a natural. Good luck in your class! icon_smile.gif

Hi Jackie, I am approaching my final week of Course 1 - I have had so much fun and cannot wait to start course 2.
I did the rainbow cake as well for my first project (see pic for inspiration!)
Its alot easier that you think.
I work full time and long hours, so I was freaking about finding time to get my cake projects done...but the good news is you can make your cake and frosting ahead of time (use water in the frosting instead of milk, it will last longer)
I cant wait to see your picture!!

Hi Caryn,

Your rainbow cake is great. I know how you feel about being excited for the next class to start. I took them all in a room and at the end of the third month I had to go through the let down of no more classes...boohoo icon_cry.gif

Wanted to pass along this tip. After classes 2 and 3 of Course 2, you will come home with lots of extra royal icing. Spend an hour or two making up as many pansies, voilets, leaves, etc. In the morning they will be dry and you can throw them into tupperwares. They keep for a long time and make your sheet cakes so cute when you use them as filler flowers next to the roses.

Just sharing ideas.
Have fun in your class.

I just started Course II last night and our instructor told us not to put our flowers in covered containers b/c they'll turn soft. Is this true? How should they be stored?

chocomama - you can put royal icing flowers in a covered container once they dry. You don't want to put them in one and seal it while htey are wet though. I've had several students find out the hard way that if you don't let the flowers air dry in the open that they will either just dry on the top and are still wet underneath or worse they don't dry at all and you don' thave them for the final cake for Course 2 or 3.

Those were great tips, thanks for sharing!!

I plan on going home tonight to practice my roses. After the 3rd week I managed to get one really good rose (i still have it saved in my fridge, lol) Tonight I want to perfect it, so for the final week I will have lots!
