Hello Everyone! I have to decorate two cakes for saturday and just dont have the time to do them both in the same day! I will be using BC and cookie & cream filling on the one. I know I can freeze BC and the filling, I will only be freezing it for the overnight. If I take it out saturday morning, how long do I let it sit out before serving it? Do I let this cake sit out at room temp for a 2-4 hours without worrying? Will it be fully defrosted by 4pm? I was planning on taking the cake out around 8am and than putting it in the fridge before we have travel with it, only an hour we have to travel with it. So any help here would be great! I'm not sure how your timeframe works but I normally take out my cakes from the freezer a day before I need to decorate (i.e. Friday). I just place them in the fridge fully wrapped. Then by Saturday I decorate them and just stick them in the fridge for serving on Saturday afternoon or even Sunday. HTH.
I dont know about a decorated cakes either, so a few days ago I placed a series of Easter decorated cupcakes and mini cakes in the freezer (My little experiement).
I know it's not exactly the same, but I will pull one out and see how long it takes to defrost and what the icing looks like after a couple of hours. I will be back in a couple of hours to let you know. I will leave on on the counter and the other in the fridge and see if there is a difference.
It has been in my experience that you can freeze a decorated cake and defrost it in the fridge. Do not defrost at room temp because it will sweat and run your colours. Also, I have found that when you defrost cakes with dark tints they tend to bleed as well. I suggest having some touch up frosting available.
I made a cake for my Brother in law, the cake was frozen when he picked it up because I was going to be out of town at the time of his party. It was a fully decorated cake. I told him to take it out of the freezer around 9am. He followed my instructions and said the cake was just fine at the party that started at 4:00. The cake was a 11x15 sheet.
The cake was decorated then place in freezer for about 3 hrs. Then I took it out and wrapped it in 2 layers of saran wrap and 2 layers of heavy duty foil. Once you take the cake from the freezer you leave it wrapped for a few hrs. Then gently take off the wrapping. The cake should be fine.
Thanks everyone! But I think I am going to skip freezing and just spend my day tomorrow doing cakes. The one I was going to freeze has red in it and I dont want to take a chance of it running and ruining the cake! Thanks but no time for a screw up for me! Thanks again Megan

My experiment went as giggysmack said the one on the counter sweated a bit. My colors did not run, but my buttercream was really stiff, so maybe that makes a difference. My colours were all "spring-ee"
