Can anyone tell me the proper way to store Marzipan sculpted pieces...

i have never made marzipan but w/ my fondant or gumpaste pieces i wrap in plastic wrap and then store in air tight container. HTH

why Marzipan? I love how it tastes, but is expencive, what do you want it for exacly?

I want to make carrots for Easter baskets... just something different. Plus is does taste wonderful.

I have been using marzipan for years, and I just throw it into a ziplock (or twist into any plastic bag) and place that into an air tight container. Sculpted pieces are stored the same way, only more gently than 'thrown in' - LOL - plastic bag and air tight container. Make sure it's kept in a cool, dark cupboard, I accidentally left some on a counter where the sun hit it once and WOW ... when it goes bad, it really turns. I've used it up to 2 mnths. later (stored properly) and my baker friend (old guy - knows his stuff) says 'it'll keep for long time' - 6 mnths or so - I've never had the chance to test this though. When it's gone bad it smells so you'll know it.
I have started using MMF and my friend also stated that you can mix it with MMF. I haven't tried this, and got busy with my project and didn't think to ask him further details. If I get any further info out of him regarding this I'll be sure to pass it on.
Hope this helps a little, people don't seems to be using marzipan as much anymore. Now that I've given into change and tried MMF I can understand why a little better I guess, but I still have a soft spot for the oldies.
