This probably sounds dumb to most of you, but tonite is the first time I have made RI and was wondering....HOW DO I STORE WHAT I HAVE LEFT??? I made some of Penney's cookies tonite (AWESOME by the way!) and started covering them with RI ...it started getting late and I decided I would put it away and do more tomorrow...but not sure how to store the left-overs....HELP ANYONE??

I usually leave it out on the counter, but only for a few days. It will need to be remixed, because it will separate.

I was told by my instructor that you can keep RI out on the counter in an airtight container for over a week. I've kept it with no problems, however, you do need to beat it again before using it, because it loses alot of its body. Any longer than that, it gets gross, pitch it! Happy baking, can't wait to see what you made!!!
